Commerical Pizza Ovens
A commercial pizza oven is an oven specifically designed to be used to cook pizza in a commercial setting. This is not an oven designed for a college dorm room, in other words, but is intended for a pizza shop. Although there is technically no reason why one could not purchase such an oven for home use, the prices for commercial pizza ovens begin in the range of several thousand dollars and grow from there, so it is hard to imagine the homemaker who would have need of it. Personal pizza ovens do exist. They are basically shrunk down version of their larger commercial counterparts, the same basic device but in a size that will fit on your counter.
Commercial pizza ovens are used by restaurants, pizzerias, and other commercial establishments looking to make large quantities of pizza. Commercial pizza ovens are large convection ovens and regardless of make, model or capacity, they all operate in more or less the same fashion. Natural gas or propane is used to light burners, or electricity is used to heat coils, and the resulting heat is moved through the oven by fans to accelerate the cooking process. The different models of commercial pizza ovens are primarily differentiated by their size and by their capacity. Models range anywhere from ovens that can hold two pizzas at once, to massive ovens capable of cooking dozens simultaneously. Some commercial pizza ovens operate like a basic home oven. Food is placed inside and removed by hand. Other commercial pizza ovens feature a variable speed conveyor belt that takes a pizza through the oven. The least costly ovens are the smallest and simplest, those that can only hold two or three pizzas at a time and which must be loaded and unloaded by hand. The top of the line commercial pizza ovens are quite large, several feet wide, tall and deep, and cook many pizzas at once.
